2017 Pheasants Tears Khikhvi-Kisi
Made from the native Georgian grapes Kisi (from eastern Georgia, in Kakheti, is a low yielding aromatic variety with very distinctive exotic floral aromas) and Khikhvi (another low yielding Kakhetian grape variety that can produce a wide array of styles ranging from dry to sweet.) As with all Pheasants’s Tears wines, it’s been made as tradition dictated thousands of years ago. Fruit is harvested by hand, foot stomped in a bath shaped vat made from a hollowed out log and fed directly into the qvevri (enormous clay pots stored underground) for aging. A wine unlike any you've probably tried before!
