Scout wines was conceived in 2017 by Sarah Adamson in the Adelaide Hills, South Australia. Following a move home to New Zealand, she brought the label with her and began sourcing fruit from vineyards across the South Island.
Riesling holds a special place in the heart of Sarah - she worked as a winemaker in the Clare Valley for 5 years, as well as in Germany. After being offered fruit from some of the oldest vines in Waipara, It was allowed to ferment naturally in tank for 3 months, until the desired sugar to acid balance was reached. It was then matured on its lees in old barrels for 12 months to build midpalate texture.
The resulting wine is intensely aromatic with bright green apple and white florals, while the palate shows juicy grapefruit with complexity from the barrel aging. It also has the classic Waipara pithy, chalky acidity and texture. It has 8g/L residual sugar, leaving the finish dry and fresh.
We’ve been drinking Sarah’s wines for several years, and they just get better and better.
Santé!
